For our easy-peel scampi, we use the Black Tiger shrimp ( Penaeus monodon ), which gets its name from its black color and distinct stripes. This shrimp is native to subtropical waters and is widely farmed in countries like Bangladesh and Vietnam.

Thawing tip:
Thaw the shrimp slowly in a covered bowl or bag in the refrigerator for 8 to 12 hours for optimal flavor. Note: Do not use hot water or a microwave to thaw the shrimp.
