Tuna can't be farmed. Unfortunately, because it would alleviate some of the pressure on wild-caught fisheries for this magnificent animal. At Golden Ocean, we therefore seek out qualified fishermen who are respectful of nature and animals.

This fish is wild-caught in the western Indian Ocean. Fishing for tuna is no easy feat. With bodies built for speeds of up to 80 km/h, only the most experienced fishermen can successfully catch it.

Furthermore, the catch is highly seasonal and even depends on the phases of the moon. Therefore, we buy the fish at the best times, during the seasons when the fat content is highest. We freeze the fish using a special method and bring home enough to ensure we can deliver the highest quality 12 months a year.

Features

Appearance:
The yellowfin tuna is recognizable by its streamlined, torpedo-shaped body with characteristic yellow fins. Along with its silvery belly and dark back, this tuna is optimally adapted for a life of hunting, speed, and strength.

Taste & Quality
Yellowfin tuna has a full, rich flavor with a light nutty undertone. The firm texture ensures the fish retains its shape nicely during frying or grilling. The meat has a deep red to pink color and becomes lighter during cooking.

Preparation
Tuna is a favorite in Japanese cuisine for both hot and cold dishes. It is therefore perfect for a steak or tataki, but also for the most delicious sushi and sashimi. A special preparation is a tuna steak with a sesame crust. Sprinkle the tuna steak with white and black sesame seeds and press them in lightly. Heat a pan with a little oil and sear the steak for only 30-60 seconds per side, so that the inside remains beautifully pink. Serve with soy sauce and a fresh salad for a light and flavorful meal.

Thawing tip:
For the best taste and texture, let the tuna thaw slowly in the refrigerator (8-12 hours). We recommend not thawing tuna any faster than this. If you do need to thaw, you can use a bowl of cold water and a tightly sealed bag. Avoid using hot water or a microwave.

Description

The tuna is a powerful fish. Imagine this powerful creature speeding through the water at 80 km/h, hunting for diving crabs, squid, herring, and mackerel. They swim at depths of 250 meters and sometimes shoot upwards for an impressive leap.

Swimming is life for this animal. Literally, because the tuna has no air bladder and would therefore sink if it stopped swimming. Furthermore, this fish is warm-blooded! The texture of its flesh is therefore just like real meat. Full of flavor, nutty with a lovely firm texture that you can fry like a beautiful piece of fish or use in delicious dishes.
