Nobashi Ebi – stretched shrimp – are a classic Japanese cuisine. They are often used in sushi or as a sophisticated tempura dish. For our Nobashi Ebi, we use Vannamei shrimp from Vietnam. After being caught, the shrimp are peeled and then carefully stretched using a traditional Japanese technique. This technique requires precision and experience to stretch the shrimp beautifully without breaking them. They are then briefly boiled, which gives them their characteristic orange color, and then quickly frozen using a special method to optimally preserve their quality.
