The squid is an exceptionally fast animal that rockets through our oceans in great numbers with its own jet engine. We're talking about the Ilex Argentinus, a squid species that lives in the South Atlantic Ocean near Argentina. We source the highest quality squid for our squid tubes and rings here.

Wild catch

On the surface of the waters of the South Atlantic Ocean, off the coast of Argentina, a remarkable spectacle unfolds at night between April and June. Large lights illuminate the sea—not stars, but fishing boats. Argentinian fishermen use powerful lights to lure squid to the surface, in a traditional fishing technique known as jigging .

This method is necessary because the Illex squid is a true ocean athlete. Thanks to their unique jet engine, these animals can reach speeds of up to 80 kilometers per hour. Capturing these lightning-fast creatures requires more cunning than brawn.

Immediately after being caught, the squid are frozen on board at extremely low temperatures (-40°C). This optimally preserves their flavor, texture, and nutritional value, allowing us to always deliver fresh-frozen squid.

Features

Appearance:
Illex squid, also known as Illex argentinus , has an elongated and streamlined body with smooth, slightly translucent skin. The squid products we offer are cleaned and ready-to-use, making them ready to use in the kitchen. Their color varies from white to light cream, depending on the preparation and processing.

Taste & Quality:
Illex squid is known for its firm yet tender texture. Compared to other squid, Illex has a slightly stronger flavor, with a subtle sweetness and a light, salty undertone. This makes it the perfect base for our squid tubes, as the texture remains even after frying.

Thawing tip:
For the best taste and texture, thaw the squid slowly in the refrigerator for 8-12 hours. If you have less time, thaw the vacuum-packed squid in cold water. Avoid using hot water or the microwave, as this can damage the texture of the squid.

For our squid tubes and rings, we use Illex Argentinus, caught in the waters around Argentina. We source these ourselves and import them directly to the Netherlands. Immediately after being caught, the squid is frozen at extremely low temperatures. This ensures excellent preservation of flavor, texture, and quality.
